This crock pot chicken recipe is quite delicious and it really can't get much easier. Just dump all of the ingredients into the slow cooker and let it do its thing for 7 to 8 hours. This crockpot chicken recipe is one of my favourite. Its easy and chicken and thyme work wonderfully together and with the slow cooking of the crock pot the flavors infuse to creat this melt in the mouth dish. A welcome dinner to be waiting for you and your family at the end of a busy day.

Ingredients for this Thyme chicken Recipe
1)2 cup chicken stock
2)½ cup white wine
3)2 tbls fresh thyme
4)1 clove garlic (minced)
5)1 lemon (cut in half)
6)3 celery ribs cut to 2 inch chunks
7)3 lbs (1.5kg) Chicken Pieces
8)2 tbls olive oil
9)salt and pepper to taste
10)Optional ingredients carrots,tomatoes, mushrooms ,zucchini
Procedure for Thyme chicken Crock Pot
1) Heat the olive oil in a large skillet over medium-high heat.
2)Season the chicken with salt and pepper, then fry in the hot oil until browned on all sides.
3)Place everything except the lemon and chicken in the Crock Pot.
4)Give the lemon a bit of a squeeze into the crock and then add the entire lemon , the entire thing.
5) Mix it all together.
6) Add the chicken and stir around as best you can to coat all in the liquid.
7) Cook on low for 7-8 hours .
Cooking Tips
To serve I pour out some of the liquid into a saucepan, added about a tablespoon of corn starch (cornflour) that is dissolved in water and brought it to the boil for a thick, thyme gravy.
Serve with rice or mashed potato and vegetables.
If you wish to add vegetables in these recipe it should go into the bottom of the crockpot, with the meat on top. This arrangement will also help prevent the chicken from overcooking.
Add tender vegetables like tomatoes, mushrooms and zucchini during the last 45 minutes of cooking time so they don't overcook.
